Gluten Free Chicken Bacon Ranch Lasagna
I adore pasta. I think I might have mentioned this before. The dough-y goodness of it. Someone once told me I should just put the sauce I like over vegetables because that’s the flavor I really missed. But no. Not for me. I could eat noodles all day long with just a pinch of salt. Many pasta recipes use a traditional red Italian style meat sauce. And while I love those plenty, sometimes I’m just craving something different. Like gluten free lasagna. With bacon and ranch. Two words that definitely go together!
This is really easy and fast recipe. The trick is to find gluten free lasagna noodles that don’t have to be prepared. Once upon a time I was able to find gluten free lasagna noodles locally, but that hasn’t been the case lately. So now I get these Barilla Oven Ready ones from Amazon. It’s actually a really good deal, and you can even save some money if you place it on your subscribe and save through Amazon prime! I used to think lasagna had to take all day, but this one is ready to eat in under an hour!
It’s all about the layers! This gluten free lasagna has 4 different layers: meat sauce, noodles, ricotta mix, and bacon. In addition to buying oven ready lasagna noodles, a couple other time saving tips for this recipe: I used my precooked shredded chicken to make the meat sauce, and I used store bought packaged bacon pieces. Sometimes I’m all about 100% made from scratch ingredients, but sometimes I just want to get the food made as quickly as possible. Precooked bacon is one of my favorite cheats, although probably not the most healthy choice haha!

For the meat sauce, we simply add precooked chicken and alfredo sauce to skillet to warm through and mix well. While this is going, you’ll start making the ricotta mixture. In a large bowl, mix ricotta cheese, eggs, parmesan cheese, and ranch mix.

Would you believe that after these 2 quick steps, you’re ready to assemble this dish? Yeah, me either! You’ll do your 4 layers in the following order:
- 1/3 of the meat sauce
- 4 lasagna noodles
- 1/2 ricotta mixture
- 1/3 cup bacon
- 1/3 meat sauce
- 4 lasagna noodles
- 1/2 ricotta mix
- 1/3 cup bacon
- 4 lasagna noodles
- Remainder of meat sauce
- 5 cheese blend
- Remainder of bacon pieces

Ahh, bacon makes everything better!!! Once it’s assembled the good news is you only have wait 30 minutes until it’s done! It comes out of the oven smelling delicious and a lovely brown color from all that melted cheese!
